And on the stove, a stock made with vegetable leftovers slowly simmered to use another day in Mexican or cilantro lime rice.<\/p>\n<p><a href=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-9308 size-large\" src=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401-1024x683.jpg\" alt=\"alt=&quot;&quot;\" width=\"1024\" height=\"683\" srcset=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401-1024x683.jpg 1024w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401-300x200.jpg 300w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401-768x512.jpg 768w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5401-400x267.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This was not a fancy hotel kitchen, but rather morning prep at New Castle Elementary School\u2019s cafeteria one of five schools added to the division\u2019s full <a href=\"http:\/\/www.vbcpsblogs.com\/core\/vbcps-moves-to-expand-scratch-cooking\/\">scratch cooking initiative<\/a> this year, bringing the total to eight.<\/p>\n<p>\u201cWe are doing enchilada bakes, Asian noodle bowls, and pork potato bowls with cornbread,\u201d division chef Kip Poole described, adding that there\u2019s two words that he says a lot: efficiency and consistency.<\/p>\n<p>As a former chef, cook and general manager for notable Hampton Roads restaurants such as Byrd &amp; Baldwin and 4-5-6 Fish, Poole knows the importance of consistency.<\/p>\n<p>\u201cWhenever you go to your favorite restaurant, you know you like a certain dish because it\u2019s a consistent and efficient product,\u201d he added. \u201cWhat this means for students is that we want to make sure, whether it\u2019s the tater tot bake or fiesta nachos, that the food will taste the same every time.\u201d<\/p>\n<p>Over the past year, the division\u2019s Food Services hired a team of lead trainers who have been <a href=\"http:\/\/www.vbcpsblogs.com\/core\/cafeteria-staff-take-stock-in-scratch-cooking\/\">training cafeteria staff<\/a>. Trainings continue every Tuesday and Thursday.<\/p>\n<p>\u201cMy manager and I went through the training right before school started and we cooked everything,\u201d Rodriguez explained. \u201cThey had displays and showed us how to cook everything. As I\u2019m doing it, it\u2019s getting easier and easier.\u201d<\/p>\n<p>She said that the students love the food. And she\u2019s right.<\/p>\n<p>\u201cIt tastes like pumpkin pie, but it isn\u2019t,\u201d fourth grader David Main eagerly shared with his lunchtime tablemates, referring to the sweet potato souffl\u00e9. That dish was one of the scratch items that he heard \u201cChef Ced\u201d promote via the school\u2019s student-broadcast morning announcements something which Jackson does every day.<\/p>\n<p>Meanwhile, third grader Brooklyn Howell was relishing her baked apple.<\/p>\n<p><a href=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-9306 size-large\" src=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884-1024x841.jpg\" alt=\"alt=&quot;&quot;\" width=\"1024\" height=\"841\" srcset=\"http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884-1024x841.jpg 1024w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884-300x246.jpg 300w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884-768x631.jpg 768w, http:\/\/www.vbcpsblogs.com\/core\/wp-content\/uploads\/2019\/10\/IMG_5884-400x329.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>\u201cIt\u2019s good. It\u2019s baked, and it has a little touch of cinnamon to it,\u201d she remarked about her tasty side dish served as an accompaniment to pasta with homemade meat sauce.<\/p>\n<p>At yet another table, third grader Nariah Ivory was enjoying her green beans, which she said were \u201chealthy for everyone.\u201d<\/p>\n<p>Principal Heather Quinn said that it\u2019s not just the students and teachers raving about scratch-cooked food. Parent Rachel Corpuz sent her a supportive and well-humored email, sharing that her children tell her \u201cevery day the lunches are amazing, and I should take pointers from the chef at the school to make better dinners! I just wanted to tell you thank you, but to take it down a notch because I am not that great of a cook! LOL.\u201d<\/p>\n<p>Kitchen staff proudly display that email in their office.<\/p>\n<p>The schools that now participate in scratch cooking are Glenwood Elementary School, Landstown Elementary School, Landstown Middle School, Linkhorn Park Elementary School, New Castle Elementary School, Old Donation School, Seatack Elementary School and White Oaks Elementary School.<\/p>\n<p>Chef Poole says that while they continue to expand the full scratch cooking initiative divisionwide, all schools have elements of it in their school cafeterias.<\/p>\n<p>\u201cRight now, every school has some sort of scratch item this year. Like our mac and cheese with homemade sauce is at every school. We have five to six scratch-made salad dressings at every school. We have a few other sides like parmesan cauliflower, baked apples and maple pears.\u201d<\/p>\n<p>It\u2019s an exciting time, he said. \u201cThe goal is to implement scratch cooking and to execute it well.\u201d<\/p>\n<p>&nbsp;<\/p>\n<p><em>Want to see the scratch cooking initiative in action?
